New Twist on Salads

I want to eat healthier but it gets boring sometimes. Thankfully there’s the internet, with millions of new recipe ideas and inspiration. While looking up salad recipes I got the idea to put black beans in my salad! I never knew you can eat black beans uncooked before! My mind was a little bit blown with this concept. It also dawned on me that I can add chickpeas and corn to a salad, easily, and cheaply.

I once had a great chiropractor who prescribed a salad for me. He took an intake of my diet and told me what I was deficient in. He told me to get a big bowl with a lid and fill it with the salad and eat a bowl of it every day. I am starting to do that again. The salad I made for this week contains, romaine, butter lettuce, black beans and corn (from cans rinsed), raw sunflower and raw pumpkin seeds. I will add avocado and tomato to it when I eat it and dressing that’s diluted with vinegar.

I’m still plagued with falling into “food ruts” occasionally but I keep steering myself back to eating more fruits and vegetables. I am also needing to save money on food as I tend to not make recipes that often and purchase food for each meal (eek!). Now it’s time to organize my cupboards, fridge, and …. life!
